More soft and delicious than a floated pass from Grealish to Sterling (okay there was a tiny bit of football, we lied). Don’t worry Spring doesn’t mean it’s all skewers and barbecues! Here’s an amazing Galician fore rib we got in this week. Galicia in Northwest Spain has a long history of eating older, often ex dairy cows. After their careers in milking have ended these cows are put out in the lush green pastures of an area of Spain which looks more like Ireland than the Costa del Sol. An almost entirely grass based diet results in the amazing bright yellow fat covering and dense marbling and their advanced age gives them an amazing deep flavour. Alongside Galician cattle we also source most of our beef from older cows here in the UK and are happy to see this more sustainable approach to animal husbandry becoming ever more popular #beef #steak #galicianbeef #londonfood #goodeats #whatsontheblock ...

Haggis, right in time for Burns’ Night. Weighing in at 1lb, they’re they perfect size for a main for two, or four as a wee starter. Traditional recipe, well spiced and piped into natural casings - they’re £5.50 each or two for a tenner.

We have searched for the best farmers and we work closely with them to guarantee the highest quality product. We regularly visit all our suppliers, who are based in and around the Home Counties. Being a small but growing butchery means that we can work closely with these passionate farmers and have built close personal relationships.
At the heart of everything we do is good animal husbandry and welfare. Many of the rare and heritage breed animals are reared using traditional free range farming methods are exclusive to Flock and Herd. Our wild game always comes from licensed suppliers.
