How to Cook a Big Steak

 

Cooking steak is pretty easy but the bigger the steak the trickier it becomes - here’s a step by step guide to getting it right

Step 1 – buy a big bone in steak – so we’re talking about prime rib, rib or cote de beouf (all types of rib eye on the bone), Wing Rib (Sirloin on the Bone), T bone (sirloin and fillet on the same bone) and any other permutation thereof. These steaks are generally best done as one bigger steak for two people depending on how hungry you’re feeling. Doing a thin bone in steak is A – tricky to cook and B – exponentially more likely to cut off your butcher’s finger when being prepared.

Step 2 – Take the steak out of the fridge plenty of time before you cook it, like two hours no problem. You want the whole steak to come up to room temperature so that you get an even cook. Trying to heat the core from the fridge tempurature of 3 or 4 degrees is very difficult and a fridge cold steak will often be nicely cooked on the outside but cold in the middle. The aim of the the game is to get your core temp to around 45 degrees so starting with something at 20 is much easier

Step 3 – Season that bad boy and stick it in a Hot Hot Pan. We’re not here to debate the nuances of seasoning, we’ve got bigger steaks to fry but we normally put rock salt and black pepper right before we put it in and use a very small amount of rape seed oil in the pan (rape seed or vegetable oil has a higher burning point than olive oil so is better for this level of heat) having said that, other seasoning is available. if you have a big wing rib or a thick sirloin you can also go fat side down on a dry pan and use that rendered fat to cook the steak in

Step 4 – Keep that big steak in the pan until your fire alarm goes off (about 4 – 6 minutes) and then if you can stick the entire pan in a hot oven (around 200c) for around 6-10 minutes depending on how big your steak is and how cooked you’d like it

Step 5 – Rest that bad boy for at least ten minutes in foil

Step 6 – Slice off the bone and serve your delicious and perfectly cooked steak
